Sauteed Baby Bella Mushrooms with Quinoa

This simple quinoa dish is packed with great flavor and lots of powerful nutrients. It’s takes only 30 minutes to prepare and is sure to be a crowd pleaser!

Sauteed Baby Bella Mushrooms with Quinoa

  • 1/2 cup uncooked quinoa
  • 1 cup water
  • 16 oz sliced baby bella mushrooms
  • 1 teaspoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 oz goat cheesePlace quinoa and water in a saucepan and bring to a boil.

Reduce to simmer, cover and cooke until water is absorbed (about 10-15 minutes). Place in a large bowl and set aside.
Heat oil in a large saute pan over medium heat. Add mushrooms and saute until tender, about 20 minutes. Add in balsamic vinegar and saute another 5 minutes.
Add mushrooms to the quinoa and toss well. Sprinkle with goat cheese cheese.
