Red Cabbage Slaw

I am always looking for new delicious side dishes to make for our summer BBQ’s.  This slaw is always a winner.  It’s low calorie, filling, packed with nutrients and beautiful!  Enjoy!!

Red Cabbage Slaw 

 

Small head of red cabbage, outer leaves removed, cored – finely shredded

2 large carrots, cut into matchsticks

1 cup fresh cilantro

juice of 3 limes

pinch of sea salt

1-2 tsp honey

1 Tablespoon olive oil

Kosher salt and fresh pepper to taste

 

Mix cabbage, carrots and cilantro in a large bowl.  In a separate bowl, whisk together lime juice, sea salt, honey and olive oil until well combined.  Toss with the slaw and mix well.  Season with salt and pepper and let sit for 30 minutes in the refrigerator before serving.
